Coffee Cream Cookie Sandwich with Lavazza Classico

INGREDIENTS

Coffee cream

3/4 cup salted butter (softened)

2 1/2 cups powdered sugar

2 tablespoons cocoa powder

2 tablespoons strongly brewed Lavazza Classico coffee (cooled)

Dark chocolate chips/chunks

Cookies

1 cup all-purpose flour

⅔ cup cocoa powder

2 tbsp espresso powder

1 tsp baking soda

1/8 tsp salt

1 stick (1/2 cup) butter, softened

1/2 cup granulated sugar

1/2 cup brown sugar

1 egg

1 tsp vanilla

2 tbsp milk.

PROCEDURE

STEP 1
Cream: In a bowl add the butter, powdered sugar, and cocoa powder. Mix on low.
 
STEP 2
Add the coffee and mix the buttercream on medium speed for 3-4 minutes, or until light and fluffy.

STEP 3

Mix in dark chocolate and store in fridge.

STEP 4
Cookies: combine flour, cocoa powder, 2 tbsp espresso powder, baking soda and salt.

STEP 5
In a separate bowl or stand mixer combine the butter and flower. Mix until smooth. Add the egg and vanilla mix again.

STEP 6
Add in the flour mixture to the egg mixture. Add in the milk. Combine then refrigerate for at least 30 min.

STEP 7
Preheat oven to 350°F. Add a dough ball onto a parchment lined baking sheet and gently press down. Bake for 10-13 min until set.

STEP 8
Add the filling in between 2 cookies. Smoosh it together and enjoy!
